Gerardo selectively picks ripe cherries and dries them slowly, allowing the fruit to develop while maintaining structure in the cup. When done well, this process creates something vivid and layered without losing balance. In the cup, we taste jasmine and blueberry with a soft honey sweetness that carries through the finish.
